I. Garlic
Basic Info: A plant of Allium (Amaryllidaceae), also called Hu garlic/single-clove garlic. Distributed in China, Iran, Spain, Turkey, etc., widely grown in China’s north and south.
Morphology: Spherical to oblate bulbs (fleshy clove-like bulblets inside, white-purple membranous coats outside); broad linear-lanceolate flat leaves; solid cylindrical scape (up to 60cm).
Growth Habit: Long-day plant, sun/moisture/fertilizer-loving, cold-tolerant. Optimal temp: 12-26℃; grows well in organic-rich loose light loam.
Nutrition & Efficacy: Contains protein, vitamins, allicin (bactericidal/insect-repellent). Bulbs, stems and leaves are medicinal (treating dysentery, snake bites, etc.).
Edible Ways: Raw, condiment (cold dishes/stir-fries), pickled/sugared/dried (garlic powder/dehydrated slices).
II. Processed Garlic Cloves
Basic Info: Made via stem-cutting, peeling, cleaning and disinfection.
Types: Salted (pickled in salt solution); Frozen (peeled, root-disc removed, quick-frozen); Fresh-keeping (peeled, disinfected, cold-stored).
Nutrition: Per 100g: 69.8g water, 4.4g protein, 23.6g carbs, plus vitamins, allicin, selenium and germanium.
Uses: Processed into frozen/mashed/fresh-keeping/salted/oil-soaked cloves or sweet-sour garlic cans (per customer needs).
III. Garlic Scapes
Basic Info: Garlic’s floral stem (also “garlic shoots”), widely distributed in China; top cold-stored veg (large quantity, long storage).
Morphology: Green slender strips, top with drum-like fleshy involucre (holds unopened inflorescences).
Growth Habit: Grows when garlic plants mature and age.
Nutrition & Efficacy: Contains fiber, vitamins, allicin (bactericidal); outer skin fiber prevents constipation.
Edible Ways: Raw (washed), stir-fried (with pork/eggs), cold dishes.
IV. Edamame
Basic Info: “Vegetable soybean”, for fresh tender pod consumption.
Morphology: Flat/sickle-shaped pods (yellow/brown when mature, fine hairs); plump bright-green oblate beans.
Growth Habit: Heat-loving, waterlogging-intolerant. Germinates at 10-20℃ (fast at 15-20℃); optimal seedling temp 20-25℃ (no flowering below 14℃).
Nutrition & Efficacy: High unsaturated fat (improves fat metabolism); rich lecithin (boosts memory); fiber (relieves constipation, protects heart).
